The Forged Blade

We wanted to make a chef knife for years, but the blade had to feel as unique as the handle. That is what led us to Wanchana Kanrangsee, one of the most original bladesmiths we have ever come across.

Each blade is a 210mm (8.3 inch) gyuto, hand-forged from Copper San Mai with a 52100 high-carbon steel core, hardened to around 65 HRC. It is etched to create a stark contrast between the steel and copper. Sharp, functional, and made for real kitchen prep.

The Live Edge Handle

Each handle is made from stabilized burl and hand-poured resin in a continuous live edge design, engraved with its matching serial number. Every handle is one of one.

The hidden tang handle is pinned for strength, with the balance point just in front of the pinch grip for a natural feel. The end piece is made from the same Copper San Mai steel and copper material as the blade, tying the whole knife together.

The Custom Box

Each knife comes in a custom walnut box made in-house at Carved. The box is built to fit the knife perfectly and engraved with the matching serial number.

Magnets hold the case closed and allow it to double as a display stand for the knife.

San Mai blade

Each knife starts with a San Mai blade hand-forged by Wanchana Kanrangsee: a high-carbon steel core inside a copper jacket, etched so the line between the two metals reads as light and shadow. Every blade is forged on its own, so no two are identical.

Live-edge handle

At the Carved shop, a stabilized live-edge wood burl is set in hand-poured resin, so each handle is a one-time pour that no other knife can copy.

Assembled by hand

The blade and handle are brought together, then ground, balanced, and finished by hand at the Carved shop in Elkhart, Indiana, before each knife is photographed on its own.

How do the drops work?

Each piece is one of a kind and sells once. When a new batch is ready we release it: you can preview the exact pieces beforehand, and they go live and become buyable the moment the drop opens. Get on the list and we'll let you know when that is.

When's the next drop?

Good question. We are scheduled to do one drop a month. Releases are small and they sell fast, so the surest way to catch one is to join the list. We'll email or text you the moment the next one is live.

Can I reserve one early?

No, that's the whole point. Every piece is held out of stock until the release opens, so nobody can jump the line. Joining the list just means you hear about it first.

What can I do to give myself the best chance of getting a knife?

These tend to go fast. We recommend logging into Apple Pay, Shop Pay, or PayPal before the drop so you can check out as quickly as possible.

What is San Mai?

A layered blade. A hard steel core does the cutting and a softer outer jacket supports it. Here the core is 52100 high-carbon steel hardened to ~65 HRC, and the jacket is copper, etched so the line between the two metals is visible.

Where is it made?

Every blade is hand-forged by our bladesmith, Wanchana Kanrangsee. Carved then makes the handle and assembles and finishes each knife by hand in Elkhart, Indiana, where we've made one-of-a-kind wood and resin goods since 2011. Each piece is backed by a 100% satisfaction guarantee.

Can I throw it in the dishwasher?

Please don't. This is a handmade chef knife with a forged blade and a one-of-one wood and resin handle. Hand wash it, dry it right away, and it will treat you well for years.
